A simple, high‑protein casserole that combines fluffy gnocchi, chicken, chickpeas and fresh veggies, topped with feta and crunchy Parmesan‑chorizo for a satisfying, meal‑prep‑ready dish.
Place gnocchi, chicken breast, chickpeas, cherry tomatoes, olive oil, lemon juice, salt, pepper and paprika in a large mixing bowl. Toss everything together until evenly coated, reserving a space in the centre for the feta.
Spoon the crumbled feta into the cleared spot in the centre of the mixture.
Transfer the whole mixture into a baking dish. Sprinkle the grated Parmesan over the top and scatter the chorizo pieces evenly.
Cover the dish with foil and bake in a pre‑heated 200 °C oven for thirty minutes.
Remove the foil and continue baking for another twenty minutes, letting the cheese turn golden and crisp.
